Bagara baingan is a telangana cuisine which is make mostly in telugu house holds of telangana during functions.People who eat only vegetarian  food prefers to eat this dish along with bagara rice during any functions. Brinjal is my favourite food which I mostly love among all vegetables and I love to cook all variations with brinjal , I love mostly brinjal curry with coriander and ginger paste and it taste so awesome . During my childhood when Iam purely vegetarian I love to have this curry during functions .The rich gravy which consists of peanuts,coconut powder and sesame seeds gives a unique taste to the curry.

INGREDIENTS:

Brinjal                      : 10 medium sized

Peanuts                      : 1 cup

sesame seeds            : 3 tbsp

Coriander powder       : 1 tbsp

cumin powder              : 1 tbsp

Dry coconut powder       : 2 tbsp

Cloves                           : 3

Elachi                             :3

cinnamon                     : 1 stick

Cumin seeds                : 1 tsp

Ginger garlic paste            : 1/2 tsp

Mustard seeds              : 1 tsp

oil                           : 2 tbsp

Water                : 3 cup

METHOD:

1.Wash and clean the brinjals and cut into half and make sure not to cut full just leave edges.

2.Now in a blender add peanuts,coconut powder and sesame seeds and blend into fine powder.

3.Soak tamarind in some water and keep aside.

4.Now take a pan and heat oil  add cloves,elachi and cinnamon.

5.Add cumin seeds,mustard seeds and let them splutter ,now add brinjals and saute for few minutes on low flame and stir well.

6.Add turmeric powder and salt and stir for few minutes .Add ginger garlic paste and red chilli powder.

7.After few minutes add blended powder and stir on low flame and add water and let it boil for few minutes add tamarind pulp and cook for few minutes .

8.When it comes to closer switch off the flame and serve this curry with  bagara rice or even with rotis also..
