Muffins are favourite foods for my kids and I always makes different types of muffins for kids and gives them when they return from school. Yesterday made this banana choco chip muffins and it is eggless version too.Previously I have made banana muffins with eggs also but never tried without eggs and I loved this eggless version my kids really enjoyed a lot.Banana has rich carbohydrates and proteins which are required mostly for growing children so I always suggest them to eat bananas rather than other fruits.
All-purpose flour – 1 1/2 cups
Bananas – 3, very ripe
Chocolate chips – 1/4 cups
Oil – 1/2 cup
Sugar – 3/4 cup
Vanilla extract – 1 tsp
Baking powder – 1 tsp
Baking soda – 1 tsp
Salt – 1/4 tsp
1 . Pre-heat the oven to 180 deg.c and line a cupcake pan or muffin pan with paper liners.
2. Combine all the dry ingredients [don’t add sugar] in a bowl and keep aside.
3. In a mixing bowl, mash the bananas with a large fork. Add oil, sugar and vanilla extract and combine well with a whisk. Add the dry ingredients and mix till just combined. Do not over-mix.
4.Scoop batter into cupcake liners and top each one with a few chocolate chips. Bake for 20-30 minutes or insert toothpick until it comes clean. The tops should be nicely browned and slightly cracked.
5.Cool in the pan for a few minutes, remove and cool completely on a wire rack.
6.These remain fresh when stored in an airtight container and keep in a fridge.
