Millets are the healthy source instead of rice and these days we are sometimes consuming to eat each variety of food which can be made with different types of millets and among all millets I prefer to eat foxtail millet among all other millets.Because foxtail millets are more healthy and contain anti-oxidants and fiber which are easily soluble to our body. Foxtail millets are previously consumed by mostly farmers in ancient days and they cultivate these grains in their farms. Mostly these millets are cultivated in southern parts of INDIA.
I prefer to cook simple one pot meals sometimes when I am in hurry among these I love khichdi with all vegetables. This time I tried masala khichdi with foxtail millets, Though my kids doesn’t love millets but I love to eat millets in any form and believe that once you try this khichdi with foxtail millet you start to eat regularly and adds this food in your diet.
Foxtail millet : 1/2 cup
Moong dal : 1 tbsp
Carrots : 2 tbsp
Beans : 2 tbsp
Peas : 2 tbsp
Onion : 3 tbsp
Tomato : 3 tbsp
Green chillies : 2
Mustard : 1/4 tsp
Cumin seeds : 1/4 tsp
Turmeric : pinch
Curry leaves : 2 sprigs
Hing : pinch
Water : 3 cups
Salt : as per needed
Oil : 3 tbsp
1.Roast foxtail millet and moong dal separately for two to three minutes or until raw smell disappear.
2.Heat a pressure pan with oil.
3.When oil gets add the ingredients which are listed in temper, add onions and cook until translucent.
4.Add tomato,ginger, and saute for few seconds.
5.Add chopped vegetables and mix well.Add turmeric,roasted millet and moong dal and quick mix.
6.Add water,salt mix well close the cooker lid and cook for 3 whistles over low flame.
7.Millet masala khichdi is ready and serve hot with raitha and some papad.
