Eggs are my favorite food among all others and yesterday I made this simple Kolhapur egg curry for lunch. The name itself so called Kolhapur is because this egg curry is from Maharashtra and mostly it is cooked in Kolhapur  region .They called this curry also anda rassa because it cooked with different spices and fresh grated coconut .My kids like this curry so much so I usually cook at least in a week . This curry tastes best with roti or some paratha and pulkas.Eggs are cooked in mild spices and  onion and tomato paste.
