Christmas is just three days away and everywhere holiday season has started and I have been busy in baking cakes and cookies for my friends and family members and here I came up with traditional Linzer cookies today in my blog.
Linzer cookies are the cookie version of the Austrian dessert Linzertorte. Born in the City of Linz, the tart consists of a crust made from flour and ground nuts — traditionally almonds — filled with black currant preserves and topped with a lattice crust. Linzer cookies mimic the torte with their almond flour dough and fruit jam filling.
For this cookies almond flour is used as a traditional way so some may makes with cashew flour also but I made my cookies with almond flour and sandwiched cookies with store brought starwberry jam.
1/2 cup : Almonds
2 1/4 cups : all-purpose flour
1/2 teaspoon : salt
1/2 cup: unsalted butter, at room temperature
1 cup : granulated sugar
1 teaspoon vanilla extract
1/2 cup :strawberry jam
1/2 cup : powdered sugar
1.Toast almonds until light brown in color and when they get cooled make into a fine powder and sieve it through a strainer and keep aside.
2.Take a bowl and add butter and sugar and mix it properly and make like a smooth texture using hand blender.
3.Now slowly add flour and almond flour not at a time but add in batches and mix gently and fold properly .
4. Add vanilla extract and make into a smooth dough. Keep this in fridge for thirty minutes.
5,After thirty minutes take the dough from fridge and roll into a disc with thickness of 1/4 and using a cookie cutter cut into round discs and cut some cookies in the middle .
6.Pre-heat oven at 180c and line a baking tray and keep a parchment paper and bake cookies for 15 minutes.
7When the cookies gets cooled sandwich them with any type of jam here I have used store brought kissan strawberry jam .
8.Dust the cookies with icing sugar on top .
