I love to have always one pot meals which makes me more comfortable to cook  and mostly i cook this simple meals during summer ,because of highest temperatures I won’t like to spend more time in kitchen I prefer to cook simple meals and among all this I choose to cook pudina rice and this is my most favourite rice and whenever I want to eat I just ruin into kitchen and make this mint pulao and it tastes best with burani raitha    or simple curd and some papad.

INGREDIENTS:

Mint leaves : 1 cup

coariander leaves : 1 /2 cup

green chillies : 4 to 5

rice : 1 cup

potatoes : 1 cut into cubes

onion : 1 thinly sliced

cashews : 3 to4  for garnish

oil : 1 tbsp

cloves : 2

cardamom : 2

cinnamon: 2

bay leaves : 1

ginger garlic paste : 1 tsp

ghee : 1 tbsp

water : 2 cups

salt : as per needed

Method:

1 Take a pressure pan and heat ghee and oil and heat for a one minute.

2. Add cardamom, cloves, bay leaves, cinnamon, chopped onion and potatoes.

3. Meanwhile blend mint leaves, coriander leaves and green chillies into a fine paste. Add ginger garlic paste and some salt and mix well.

4. Add this blended mixture into the pan and stir for one minute so that some raw smell disappear take care not to burn and cook on low flame.

5. Add water in 1: 2 ratio and pressure cook for three whistles and switch off the flame and when pressure releases out serve hot with some curd or raitha along with some papad.
