After one month of gap here I came up with some yummy soup which is perfect for this rainy season that is sweet corn soup. My family loves all types of soups and especially my husband loves this sweet corn soup mostly among all.Making this soup is quite easy and it is perfect for this cloudy weather.Corn is available in this season and we can make lots of recipes with this sweet corn like fritters,dosa and some chats too.

Ingredients:

Sweet corn        : 1 medium size

Water                 : 2 cups

Black pepper     : 1/2 tsp

carrot                 : 1 tbsp  {finely chopped}

spring onion      : 1 tbsp

corn flour         : 1/2 tsp

oil                    : 1 tbsp

salt as per needed.

METHOD:

  1. To make sweet corn soup first of all we have to boil corn and when corn gets boiled scrape the corn and keep some kernels aside.
  2. Now make corn puree ,add corn kernels in a blender and add some water and blend into fine paste.
  3. Now take a pan add some oil and saute spring onions and carrots and stir for a minute.
  4. Add corn puree and stir well, after one minute add water and stir well.
  5. Add salt and black pepper and mix well.When it comes to boil add remaining corn kernels and simmer for two minutes .
  6. Now switch off the flame and garnish with spring onions and serve hot along with toasted bread or serve single.
